There are different varieties of truffles, whose price and maturity periods vary. So the black truffle, Tuber melanosporum, one of the most prestigious types, reaches full maturity between mid-January and late March, depending on the season.
But does this mean that eating a fresh black truffle requires waiting until winter? No: La Maison de la Truffe offers fresh black truffles from Australia's Manjimup region, which offers climatic and geological conditions that make it comparable to French truffle patches. So when winter begins in Australia, the summer is hitting its peak in France, which allows for fresh Melanosporum from June to August.
The truffle is the most expensive food product, especially because of its rarity and its production cost. The price of the black truffle varies from €500 to €1000 per kilogram. The white truffle of Alba ranges between €5000 and €7000 per kilogram.
